- In a large bowl, combine Greek yogurt, freshly squeezed lemon juice, finely grated garlic, paprika, ground cumin, oregano, red pepper flakes, ground cinnamon, and salt. Mix until well blended.
- Place the chicken thighs into the marinade, ensuring each piece is fully coated. Allow them to marinate for at least 30 minutes or up to overnight for more intense flavor.
- Slice the onion into thick rounds to create a stable base for your tower. Stack the marinated chicken thighs atop the onion, creating a visually stunning tower formation.
- Preheat the oven to 375°F (190°C). Place the assembled tower on a baking sheet and bake for approximately 1 hour, or until the chicken reaches an internal temperature of 165°F and is beautifully golden brown.
- While the chicken is baking, mix together thinly sliced red onion, additional lemon juice, ground sumac, and a pinch of salt. This fresh topping will complement the shawarma perfectly.
