Description
A comforting and classic homemade chicken noodle soup made with tender chicken, fresh vegetables, and hearty egg noodles in a rich broth.
Ingredients

- 2 cups shredded cooked chicken breast
- 8 cups homemade chicken broth
- 3 cups uncooked egg noodles
- 2–3 celery stalks, diced
- 1 small onion, diced
- 3 medium carrots, diced
- 1 tablespoon thyme
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- Wash and dice the carrots, onions, and celery.
- Heat olive oil in a sauté pan and add the diced vegetables. Sauté until the onion is translucent.
- In a large stock pot, combine homemade chicken broth, shredded chicken, sautéed veggies, thyme, salt, and pepper.
- Bring to a boil over medium heat.
- Add uncooked egg noodles and cook for about 15 minutes until tender.
- Serve hot and enjoy!
