Description

A comforting and classic homemade chicken noodle soup made with tender chicken, fresh vegetables, and hearty egg noodles in a rich broth.


Ingredients

  • 2 cups shredded cooked chicken breast
  • 8 cups homemade chicken broth
  • 3 cups uncooked egg noodles
  • 23 celery stalks, diced
  • 1 small onion, diced
  • 3 medium carrots, diced
  • 1 tablespoon thyme
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Wash and dice the carrots, onions, and celery.
  2. Heat olive oil in a sauté pan and add the diced vegetables. Sauté until the onion is translucent.
  3. In a large stock pot, combine homemade chicken broth, shredded chicken, sautéed veggies, thyme, salt, and pepper.
  4. Bring to a boil over medium heat.
  5. Add uncooked egg noodles and cook for about 15 minutes until tender.
  6. Serve hot and enjoy!
