Description

Quick and easy cheesy pepperoni pizza roll-ups made with low-carb tortillas, marinara sauce, mozzarella cheese, and pepperoni. Perfect for a guilt-free snack or appetizer.


Ingredients

  • 4 low-carb tortillas
  • 8 tablespoons marinara sauce
  • 2 cups freshly shredded mozzarella cheese
  • 20 slices pepperoni
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spread 2 tablespoons of marinara sauce evenly on each tortilla, leaving a half-inch border.
  3. Sprinkle mozzarella cheese generously over the marinara sauce.
  4. Arrange pepperoni slices evenly on top of the cheese.
  5. Roll each tortilla tightly.
  6. Brush the outside of the rolled tortillas with olive oil.
  7. Bake seam-side down on a baking sheet for 10-12 minutes until golden brown and cheese is bubbling.
  8. Cool slightly, then slice into bite-sized pieces. Serve warm.
