- 4 low-carb tortillas
- 8 tablespoons marinara sauce
- 2 cups freshly shredded mozzarella cheese
- 20 slices pepperoni
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Spread 2 tablespoons of marinara sauce evenly on each tortilla, leaving a half-inch border.
- Sprinkle mozzarella cheese generously over the marinara sauce.
- Arrange pepperoni slices evenly on top of the cheese.
- Roll each tortilla tightly.
- Brush the outside of the rolled tortillas with olive oil.
- Bake seam-side down on a baking sheet for 10-12 minutes until golden brown and cheese is bubbling.
- Cool slightly, then slice into bite-sized pieces. Serve warm.
