Ingredients

  • 12 oz fettuccine pasta
  • 2 cups cooked chicken breast, shredded or diced
  • 2 cups broccoli florets
  • 1 cup chopped bell peppers (red, yellow, or orange)
  • 4 cloves garlic, minced
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add in the broccoli florets and bell peppers, stirring for about 4-5 minutes until slightly tender. Remove from heat.
  4. In a large bowl, combine the softened cream cheese, sour cream, Italian seasoning, salt, and pepper. Mix until smooth and well combined.
  5. In the large bowl containing the creamy mixture, fold in the cooked pasta, sautéed vegetables, and shredded chicken. Make sure everything is evenly coated with the sauce.
  6. Transfer the mixture into a greased 9×13 inch baking dish, spreading it evenly. Top with mozzarella cheese, cheddar cheese, and grated Parmesan cheese.
  7. Place the baking dish in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden.
  8. Once baked, remove from oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

  • For a spicier kick, add a pinch of red pepper flakes to the cream sauce.
