- 12 oz fettuccine pasta
- 2 cups cooked chicken breast, shredded or diced
- 2 cups broccoli florets
- 1 cup chopped bell peppers (red, yellow, or orange)
- 4 cloves garlic, minced
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add in the broccoli florets and bell peppers, stirring for about 4-5 minutes until slightly tender. Remove from heat.
- In a large bowl, combine the softened cream cheese, sour cream, Italian seasoning, salt, and pepper. Mix until smooth and well combined.
- In the large bowl containing the creamy mixture, fold in the cooked pasta, sautéed vegetables, and shredded chicken. Make sure everything is evenly coated with the sauce.
- Transfer the mixture into a greased 9×13 inch baking dish, spreading it evenly. Top with mozzarella cheese, cheddar cheese, and grated Parmesan cheese.
- Place the baking dish in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden.
- Once baked, remove from oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the cream sauce.
- You can substitute other vegetables like mushrooms, spinach, or zucchini.
- If you prefer a thinner sauce, add a splash of milk or chicken broth when combining the ingredients.
