- 1.5 heads Cauliflower
- 6 Tbsp. Butter
- 0.5 cups Heavy Cream
- 3 cloves Garlic (minced)
- 2 cups White Cheddar (grated)
- 1 cup Parmesan (freshly grated)
- 1 Tbsp. Fresh Thyme
- to taste Kosher Salt
- to taste Freshly Ground Black Pepper
Instructions
- Preheat your oven to 400ºF.
- Boil the cauliflower in a large pot of salted water for around 8 minutes.
- Butter a large baking dish generously to ensure the cheesy creation doesn’t stick.
- Layer half of the cooked cauliflower, then pour on half of the heavy cream.
- Layer with half of the butter, garlic, white cheddar, Parmesan, thyme leaves, and sprinkle with salt and pepper to taste. Repeat this layering process.
- Bake in the preheated oven for 30 minutes until the cheese is melty and golden brown.
- Cool for 5 minutes before serving.
