Ingredients

  • 1.5 heads Cauliflower
  • 6 Tbsp. Butter
  • 0.5 cups Heavy Cream
  • 3 cloves Garlic (minced)
  • 2 cups White Cheddar (grated)
  • 1 cup Parmesan (freshly grated)
  • 1 Tbsp. Fresh Thyme
  • to taste Kosher Salt
  • to taste Freshly Ground Black Pepper

Instructions

  1. Preheat your oven to 400ºF.
  2. Boil the cauliflower in a large pot of salted water for around 8 minutes.
  3. Butter a large baking dish generously to ensure the cheesy creation doesn’t stick.
  4. Layer half of the cooked cauliflower, then pour on half of the heavy cream.
  5. Layer with half of the butter, garlic, white cheddar, Parmesan, thyme leaves, and sprinkle with salt and pepper to taste. Repeat this layering process.
  6. Bake in the preheated oven for 30 minutes until the cheese is melty and golden brown.
  7. Cool for 5 minutes before serving.
