Delicious Cheddar Jalapeño Cornbread Waffles for Your Brunch

- 1 cup buttermilk
- 4 tablespoons unsalted butter (melted)

- 1 cup shredded sharp cheddar cheese
- 1/4 cup pickled jalapeños
- 2 tablespoons honey (optional)
- 1 tablespoon cooking spray or melted butter
Instructions
- Preheat your waffle iron and lightly grease it with cooking spray or melted butter.
- Whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt in a large bowl.
- Combine the wet ingredients by whisking the buttermilk, melted butter, eggs, and optional honey in a separate bowl.
- Mix the wet and dry ingredients gently until just combined, then fold in the cheddar cheese and jalapeños.
- Pour about 1/2 to 2/3 cup of batter onto your preheated waffle iron and cook for 4–5 minutes until golden brown.
- Serve hot, topped with butter, sour cream, honey, or salsa.
