Description

Elegant broiled lamb chops with golden roasted potatoes and crisp-tender broccoli – a 30-minute meal that transforms weeknights into special occasions.


Ingredients

Scale
  • 1 rack of lamb, frenched (about 1.52 lbs)
  • 1 lb baby potatoes, halved if large
  • 4 cups fresh broccoli florets
  • 1 tsp granulated garlic (or 4 fresh garlic cloves, minced)
  • 2 tsp dried thyme (or 1 tbsp fresh thyme leaves)
  • 34 tbsp extra virgin olive oil
  • Kosher salt to taste
  • Freshly ground black pepper

Instructions

  1. Preheat oven to 400°F. Line sheet pan with foil. Toss potatoes with 2 tbsp olive oil, half the garlic, salt, and pepper. Roast for 15 minutes.
  2. Divide lamb rack into individual chops. Arrange on foil-lined pan. Season with remaining olive oil, salt, pepper, and thyme. Let reach room temperature.
  3. Remove potatoes and switch oven to broil. Add broccoli to potato pan, toss with remaining garlic, salt, and pepper.
  4. Broil lamb chops 5 minutes per side for medium-rare. Return vegetable pan to lower rack during cooking.
  5. Let lamb rest 10 minutes. Continue cooking vegetables until tender while lamb rests.
  6. Arrange 2-3 lamb chops per plate with potatoes and broccoli. Serve immediately.
