Description
Delicious brioche cinnamon rolls filled with tender cinnamon apples and topped with a honey glaze. A perfect combination of soft brioche dough and sweet apple filling.
Ingredients

- 1 cup milk (plant based milk works well)
- 8 grams active dry yeast (1 packet)
- 4 cups all-purpose flour
- ¼ cup granulated sugar
- 1 teaspoon salt
- ¼ cup unsalted butter, cubed
- zest of 1 orange
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 4 large apples (about 2 pounds or 900 grams), peeled, cored and cubed
- 2 tbsp unsalted butter
- 1–2 teaspoon cinnamon
- ½ cup brown sugar
- 2 tbsp honey
Instructions
- Heat milk, add yeast. Mix dry ingredients with butter. Add yeast mixture, egg, and vanilla. Knead 7-8 minutes. Let rise 3 hours.
- Cook apples with butter, cinnamon, and brown sugar for 10-15 minutes until tender. Cool.
- Roll dough into 12×18″ rectangle. Spread filling. Roll tightly, cut into 12 slices. Rise 45 minutes.
- Bake at 350°F for 30-35 minutes. Brush with honey if desired.
