Ingredients

Scale
  • 1 cup milk (plant based milk works well)
  • 8 grams active dry yeast (1 packet)
  • 4 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 teaspoon salt
  • ¼ cup unsalted butter, cubed
  • zest of 1 orange
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 4 large apples (about 2 pounds or 900 grams), peeled, cored and cubed
  • 2 tbsp unsalted butter
  • 12 teaspoon cinnamon
  • ½ cup brown sugar
  • 2 tbsp honey

Instructions

  1. Heat milk, add yeast. Mix dry ingredients with butter. Add yeast mixture, egg, and vanilla. Knead 7-8 minutes. Let rise 3 hours.
  2. Cook apples with butter, cinnamon, and brown sugar for 10-15 minutes until tender. Cool.
  3. Roll dough into 12×18″ rectangle. Spread filling. Roll tightly, cut into 12 slices. Rise 45 minutes.
