  • 2 cups fresh or frozen blueberries
  • 1/2 cup chopped nuts (optional)
  • 2 tablespoons chia seeds (optional)
  • 1 tablespoon cooking spray or butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish generously with cooking spray or butter.
  2. In a large mixing bowl, whisk together the low-fat cottage cheese, large eggs, honey or maple syrup, vanilla extract, ground cinnamon, and salt until completely smooth.
  3. Stir in the rolled oats and almond milk until well combined. Let the mixture sit for about 5 minutes.
