- 1 can (15 oz) Chickpeas (drained)
- 1 Roasted Beet (peeled and diced)
- 2 tbsp Tahini
- 2 tbsp Lemon Juice
- 1 clove Garlic (minced)
- Veggies (Assorted, like carrots and cucumbers)
- Pita Chips
Instructions
- In a food processor, add the drained chickpeas, diced roasted beet, tahini, lemon juice, and minced garlic. Blend until smooth, about 1-2 minutes.
- If too thick, add a tablespoon of water at a time until you reach a silky texture.
- Transfer the beet hummus into a serving bowl and create an artistic swirl on top.
- Sprinkle extra tahini or drizzle olive oil on top before serving.
- Arrange assorted veggies and pita chips around the dip on a platter.
