Irresistibly Easy Savory Carrot Balls for Healthy Snacking


Ingredients

  • 300 g Grated carrots
  • 100 g Oats
  • 2 tbsp Ground flaxseed
  • 1 Onion, chopped
  • 3 Garlic, minced
  • 1 tbsp Mustard
  • 1 tbsp Tomato paste or ketchup
  • 1.5 tsp Paprika powder
  • 1 tsp Curry powder
  • 0.5 tsp Chili powder
  • 23 tbsp Bread crumbs
  • Salt and pepper to taste

Instructions

  1. Prepare the flax egg: Whisk together the ground flaxseeds and about 8 tablespoons of water in a small bowl, letting it rest for 5 minutes until it thickens.
  2. Mix the ingredients: In a large bowl, combine the flax egg and all the other ingredients. Stir well until everything is evenly incorporated.
  3. Rest the mixture: Cover the bowl and let the mixture rest for about 30 minutes to enhance the flavor and help with binding.
  4. Preheat the oven: Set your oven to 200°C/400ºF.
  5. Shape the balls: Using about 2 tablespoons of the mixture for each ball, form them gently and place them on a lined baking sheet.
  6. Bake: Pop them in the oven and bake for 15-20 minutes, flipping halfway through, until they are golden brown and crispy.
  7. Fry (optional): If you prefer, heat oil in a pan and fry the balls for about 3-4 minutes on each side until golden and crispy.
