Ingredients

- 300 g Grated carrots
- 100 g Oats
- 2 tbsp Ground flaxseed
- 1 Onion, chopped
- 3 Garlic, minced
- 1 tbsp Mustard
- 1 tbsp Tomato paste or ketchup
- 1.5 tsp Paprika powder
- 1 tsp Curry powder
- 0.5 tsp Chili powder
- 2–3 tbsp Bread crumbs
- Salt and pepper to taste
Instructions
- Prepare the flax egg: Whisk together the ground flaxseeds and about 8 tablespoons of water in a small bowl, letting it rest for 5 minutes until it thickens.
- Mix the ingredients: In a large bowl, combine the flax egg and all the other ingredients. Stir well until everything is evenly incorporated.
- Rest the mixture: Cover the bowl and let the mixture rest for about 30 minutes to enhance the flavor and help with binding.
- Preheat the oven: Set your oven to 200°C/400ºF.
- Shape the balls: Using about 2 tablespoons of the mixture for each ball, form them gently and place them on a lined baking sheet.
- Bake: Pop them in the oven and bake for 15-20 minutes, flipping halfway through, until they are golden brown and crispy.
- Fry (optional): If you prefer, heat oil in a pan and fry the balls for about 3-4 minutes on each side until golden and crispy.
