- 2 sheets Puff Pastry
- 1 cup Granulated Sugar
- ⅔ cup Water
- 1 stick Cinnamon Stick
- 1 strip Lemon Zest
- ½ cup All-Purpose Flour
- 1 cup Whole Milk
- 5 tablespoons Whole Milk
- 6 Egg Yolks
- to taste Ground Cinnamon
Instructions
- Preheat your oven to 350°F.
- Prepare the puff pastry by rolling it into a log and cutting into ½-inch segments.
- Mold each slice into an egg tart mold or muffin tin with the cut side facing up.
- Combine sugar, water, lemon zest, and cinnamon stick in a saucepan and boil for 1 minute.
- Heat 1 cup of milk until bubbles form around the edges.
- Whisk flour with 5 tablespoons of remaining milk and gradually stir in hot milk to create a smooth blend.
- Mix in the syrup, return to low heat, and whisk until thickened.
- Incorporate the egg yolks into the custard mix, whisking well and straining through a sieve.
- Fill each pastry shell with 1 ½ tablespoons of the custard mixture.
- Bake until golden brown and crisp for 15-20 minutes.
- Cool slightly in pans for 5 minutes, then transfer to a wire rack and sprinkle with cinnamon.
- Serve warm for the best experience.
