Description
Delight in these Peanut Butter Cookie Dough Bars—indulgent, creamy, and guilt-free!
Ingredients
Scale
- 1 cup oat flour (gluten-free option)
- 1 cup smooth peanut butter (use natural for less sugar)
- 1/2 cup maple syrup (can be replaced with honey)
- 1/4 cup coconut oil (substitute with unsalted butter if needed)
- 1 tsp vanilla extract (pure vanilla is best)
- 1/4 tsp salt (consider sea salt for gourmet touch)
- 1 cup dark chocolate chips (or use milk chocolate for a sweeter option)
- 1/2 cup dark chocolate (at least 70% cocoa for richness)
- 1/4 cup smooth peanut butter (can substitute with almond butter)
Instructions
- In a large bowl, mix the oat flour and salt together. Then, add the smooth peanut butter, coconut oil, maple syrup, and vanilla extract. Stir until all ingredients are well blended.
- Gently fold in the dark chocolate chips until evenly distributed within the mixture.
- Transfer the mixture into a loaf tin lined with parchment paper. Press it firmly into an even layer, then refrigerate for 1 hour to set.
- While waiting, melt the dark chocolate and additional peanut butter in a bain marie or microwave until smooth, stirring occasionally.
- Drizzle the melted chocolate mixture over the chilled base. Allow it to cool before returning it to the fridge until the chocolate has fully set.
- Once the chocolate is set, slice the bars into squares, and enjoy them!
