Description

A moist and sweet Southern-style cornbread with a delicious honey butter glaze, perfect as a side dish or snack.


Ingredients

Scale
  • 2 cups yellow cornmeal
  • 2 cups all purpose flour
  • 1 can creamed corn (15 oz)
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups milk
  • 2/3 cup vegetable oil
  • 4 tbsp honey
  • 4 tbsp butter

Instructions

  1. In a small saucepan, melt butter and slowly add honey. Mix and remove from heat.
  2. Preheat oven to 400°F. Grease cast iron skillet or baking pan.
  3. In a medium bowl, mix cornmeal, flour, sugar, baking powder, and salt.
  4. In separate bowl, mix milk, creamed corn, oil, and eggs until combined.
  5. Make a well in dry ingredients, pour in wet mixture, and stir until blended.
  6. Pour into greased 13×9 pan and bake 30-35 minutes.
  7. After 20 minutes, brush with honey butter and continue baking.
  8. Cornbread is done when wooden pick inserted in center comes out clean.
  9. Rest until cool before serving. Serve with extra honey butter.
