Description

A vegan and gluten-free Giant Frosted Matcha Pop Tart, offering a nostalgic childhood favorite with wholesome ingredients and a vibrant matcha flavor. This large treat is perfect for sharing or indulging.

Ingredients

Scale
  • For the Dough:
  • 2 cups Gluten-Free 1:1 Baking Flour
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Dairy-Free Stick Butter
  • 1/4 cup Solid Coconut Oil
  • 68 tbsp Ice-Cold Water
  • For the Filling:
  • 1/2 cup Cane Sugar
  • 1 tbsp Gluten-Free 1:1 Baking Flour
  • 2 tbsp High-Quality Matcha Powder
  • For the Icing:
  • 2 cups Powdered Sugar
  • 24 tbsp Oat Milk

Instructions

  1. Prepare Dough: Whisk together gluten-free baking flour, baking powder, and salt in a bowl. Cut in the dairy-free butter and coconut oil until crumbly. Gradually add ice-cold water until the dough forms, then chill for 1 hour.
  2. Make Filling: Combine cane sugar, gluten-free flour, and matcha powder in a separate bowl.
  3. Roll Dough: Roll the chilled dough into two rectangles, each measuring 7½ x 10½ inches. Place one rectangle on a lined baking sheet.
  4. Assemble Pop Tart: Spread the matcha filling evenly over the dough on the baking sheet. Wet the edges with water and top with the second dough rectangle.
  5. Seal and Vent: Press the edges to seal and crimp with a fork. Poke holes in the top dough layer for steam to escape.
  6. Bake: Preheat your oven to 350°F (175°C). Bake the assembled pop tart for approximately 30 minutes, or until lightly golden and firm.
  7. Cool and Ice: Let the pop tart cool completely. Prepare the icing by whisking powdered sugar and oat milk until smooth. Spread generously over the cooled pop tart and let it set before slicing.
  8. Decorate (Optional): Drizzle with additional matcha icing for a decorative touch.

Notes

  • Serve at room temperature for the best texture and flavor.
  • For a flakier crust, ensure the dough is well-chilled and the coconut oil is solid.
  • Use high-quality matcha powder for the most vibrant color and rich taste.
  • This recipe makes one large pop tart, yielding approximately 8 slices.
