Ingredients
Scale
- 6 to 8 medium-sized tart apples (like Granny Smith or Honeycrisp)
- 1 tablespoon lemon juice
- 3/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons all-purpose flour
- 2 teaspoons vanilla extract
- 1 tablespoon unsalted butter, cut into small pieces
- 1 recipe for 9-inch double-crust pie pastry
- 1 egg
- 1 tablespoon milk
- Optional: A pinch of salt
Instructions
- Peel, core, and slice apples thinly. Place in a bowl and toss with lemon juice.
- In a separate bowl, combine granulated sugar, brown sugar, cinnamon, nutmeg, and flour.
- Pour sugar mixture over apples and toss to coat evenly. Stir in vanilla extract.
- Preheat oven to 425°F (220°C).
- Roll out one pie crust and fit into a 9-inch pie pan.
- Pour apple filling into the crust, mounding slightly in the center. Dot with butter pieces.
- Roll out the second pie crust for the top. Place over filling. Cut slits or create a lattice. Seal and crimp edges.
- Whisk egg and milk together for egg wash. Brush over the top crust.
- Place pie on a baking sheet. Bake at 425°F (220°C) for 15 minutes.
- Reduce oven temperature to 350°F (175°C) and bake for 30-35 minutes more, or until crust is golden brown and apples are tender. Cover edges with foil if browning too quickly.
- Remove from oven and let cool for at least 2 hours before slicing.
- Serve warm or at room temperature.
Notes
- For a crispier crust, ensure your oven is fully preheated.
- Allowing the pie to cool completely is crucial for the filling to set properly.
- Serve with vanilla ice cream or whipped cream for an enhanced experience.
